As children grow, they're always discovering new flavors and foods they love. I originally made this jerk chicken sandwich for my kids to take to school, but it quickly became a family favorite. They now ask for it all the time; whether it’s lunch, a snack, or even dinner. This year, for Thanksgiving, my kids have requested that my special sandwich be part of our feast. It’s become more than just a meal—it’s part of our family’s tradition.
Thanksgiving is a time to celebrate family, love, and the traditions that bring us together. I feel incredibly proud as a father to have created something my children love so much that it’s now part of our family’s cherished memories. This sandwich symbolizes not only great food but also the joy of building new traditions and passing them down to future generations.
Ingredients
Chicken breast
Cocoa bread
Walkerswood Jerk Seasoning
Lime & lemon (for zest and freshness)
Jerk BBQ sauce
Sweet chipotle mayo
Garlic
Water, vinegar, and lemon juice (for cleaning)
Lettuce
Tomato
Directions
Prep the chicken: Clean the chicken breast by rinsing it with water, vinegar, and lemon juice. Pat dry.
Season: Rub the chicken breast with Walkerswood Jerk Seasoning, garlic, lime, and lemon.
Cook: Air fry the chicken based on its size:
4-5 oz: 10-12 minutes
6-8 oz: 13-15 minutes
9-12 oz: 16-20 minutes
Flip halfway through for even cooking.
Glaze: After the chicken is done cooking, glaze it with jerk BBQ sauce while still warm.
Toast the bread: Lightly toast the cocoa bread.
Assemble: Spread sweet chipotle mayo on the toasted cocoa bread. Add fresh lettuce and tomato slices.
Finish: Place the glazed jerk chicken on the bread and squeeze fresh lime juice over the top.
Enjoy: Close the sandwich and savor the flavors!
