Southern Candied Yams

Ingredients
6 large sweet potatoes
1/2 cup butter
1 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon vanilla extract
Salt
Directions
Peel the sweet potatoes and cut them into slices.
Melt the butter in a large, heavy skillet and add the sliced sweet potatoes.
Mix the sugar, cinnamon, nutmeg and salt in a small mixing bowl.
Pour the sugar mixture over the sweet potatoes and stir until the potatoes are evenly coated.
Cover the skillet and cook over low heat for about 1 hour or until the potatoes are "candied". Stir only occasionally during the cooking.
Remove from the heat when the sauce darkens and when the potatoes are tender and a little hard around the edges.
Stir in the vanilla just before serving. Add salt to taste.
Serve hot.
