Southern Candied Yams

Ingredients

  • 6 large sweet potatoes

  • 1/2 cup butter

  • 1 cups white sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1 tablespoon vanilla extract

  • Salt

Directions

  • Peel the sweet potatoes and cut them into slices. 

  • Melt the butter in a large, heavy skillet and add the sliced sweet potatoes.

  • Mix the sugar, cinnamon, nutmeg and salt in a small mixing bowl.

  • Pour the sugar mixture over the sweet potatoes and stir until the potatoes are evenly coated. 

  • Cover the skillet and cook over low heat for about 1 hour or until the potatoes are "candied". Stir only occasionally during the cooking.

  • Remove from the heat when the sauce darkens and when the potatoes are tender and a little hard around the edges. 

  • Stir in the vanilla just before serving. Add salt to taste.

  • Serve hot.
