Farah’s Fabulous Caribbean Apple Pie

When I think of Caribbean Apple Pie, I'm reminded of how a single dish can capture the warmth and vibrant spirit of our community. Growing up, this wasn’t just a pie; it was a celebration of flavors and traditions, bringing family and friends together. Unlike the traditional apple pie, our Caribbean version is spiced with unique ingredients that make each bite feel like a taste of home. It’s a beautiful reminder of our heritage—something familiar yet filled with distinctive, soulful flavors, much like our culture itself.

 
 

Ingredients

  • 1 tablespoon lemon juice

  • 1/2 cup apple cider vinegar

  • 1 stick unsalted butter

  • 1 tablespoon Amaretto

  • 1 tablespoon Cremas or Coquito (optional)

  • Pinch of Himalayan salt

  • 1 egg

  • 1 pre-made pie crust (or homemade if preferred)

  • 4 Granny Smith apples

  • 2 tablespoons cornstarch

  • 1/2 cup brown sugar

  • 1/2 tablespoon nutmeg

  • 1 tablespoon cinnamon

  • 1 tablespoon vanilla extract

Directions

  • Preheat Oven: Set your oven to 375°F (190°C).

  • Prepare Filling: In a large bowl, mix the cornstarch, brown sugar, nutmeg, cinnamon, vanilla extract, lemon juice, and apple cider vinegar until smooth.

  • Melt Butter: In a saucepan over medium heat, melt the butter, then add the Amaretto and Cremas or Coquito (if using). Stir in the butter mixture with the filling mixture until well combined.

  • Assemble Pie: Place the pie crust in a pie dish, then pour the filling into the crust. Sprinkle a pinch of Himalayan salt over the filling.

  • Egg Wash: In a small bowl, beat the egg and brush it over the top crust for a golden finish.

  • Bake: Place the pie in the oven and bake for 45-50 minutes, or until the crust is golden and the filling is bubbly.

  • Cool & Serve: Allow the pie to cool before serving.
